Blind Date With A Vegetable

Eating vegetables (especially if you do not like most, like me) reminds me of going on a blind date. 

Yes, even though you REALLY don’t want to do it, or even try it, you know it is good for you, and your excuses for not going on that date are lame. So you have to push yourself, talk yourself into it, remind yourself it is good for you, and even put on a big smile and maybe even fake it. And, after it is all said and done, you might be surprised, because you just never know, a meaningful relationship may have just started.

The truth is that I am being kind when I say I do not like most veggies. I'm just trying to sound like a good role model. I really detest most vegetables and you already know how I feel about celery sticks. But, I cannot deny the low-fat and low-calorie benefits, so here I share my new Loves.

Each month, another vegetable from my yuck list will be featured, along with suggested recipe and nutritional info.
