Snap Peas

Snap peas and snow peas are full of fiber, low in calories and a simple fast snack. Here’s one easy and delicious way to jazz them up:

Panko-Tossed Garlicky Lemon Snap Peas

  • 1 tablespoon olive oil
  • non-stick cooking spray
  • 1/4 cup panko or regular breadcrumbs
  • 1 medium garlic clove. finely chopped
  • zest from 1 lemon
  • pinch chili flakes
  • pinch salt
  • 3 cups snap or snow peas (string beans work well too)

Spray a saute pan generously with non-stick spray, add oil, and heat in a large heavy saute pan over medium heat.

Add bread crumbs and coat in oil well, toasting for about 3 minutes until breadcrumbs are golden brown.
Stir in remaining ingredients, except the pea pods, and cook for about a minute, stirring well.
Remove from pan and set aside.
Spray saute pan again with non-stick cooking spray and add pea pods, stirring for about two minutes until pea pods are cooked with a bit of firmness.
Add breadcrumb mixture back in and toss well, cooking for an additional 30 seconds.
Serve immediately or at room temperature.
